Nick Pallotta’s first memories of hot and spicy food came around the young age of 6 years old, where his parents would pack the family car and head off to upstate NY farms to pick fresh vegetables and hot peppers. Their house was always filled with the fragrance of fresh greens and on Sundays his mother would make hot sauces, spreads, eggplant and artichoke. Nick started his own home garden, and it wasn’t long before he made his first pepper sauce years ago.
Nick had no intention of starting a company, but everyone loved it and persuaded him. There was A LOT of research done from starting his first batch to bringing Pallotta Hot to full on operations including, but not limited to researching costs of producing sauces; bottles, labels, ingredients, any regulatory and testing costs. Nick loves the challenge of creating something that people love. He’s always had a passion for cooking so making something that people can use and people want keeps him even more motivated to continue being a hot sauce maker.
