I guess you could say my passion for fiery foods started at birth. I have many fond memories of my little Irish grandmother removing her own shaker of hot pepper flakes or hot sauce from her purse whenever we were out at dinner. My love for growing started with my Father, who to this day, maintains a vegetable garden that is the envy of all the neighborhood. I myself have been growing hot peppers and making hot sauces for nearly two decades.
Finally in 2011, after much encouragement from family and friends, I decided to take my passion to the next level and Red Hawk Premium Peppers was born! We currently grow the majority of all of our peppers and still hand-make all of our small batch products.
Red Hawk has a wide range of products that please the novice fire eater all the way up to the hardcore Chilehead! All of our products from mild to extreme are focused primarily on flavor and not just the heat. We use all types of hot peppers from your run-of-the-mill Fresno and Chocolate habanero to more exotic varieties like the Trinidad Scorpion, 7 Pot and Carolina Reaper.
Our most popular line is our "Grounds for Divorce" garlic sauce series. Our garlic sauce series features three richly flavored sauces in various heat levels. The original GFD is a mild garlic sauce made with Fresno peppers (similar to a Jalapeno) while the medium heat uses Bhut Jolokia (Ghost) peppers to turn up the heat. The hottest version in the series is our "HOLY ALIMONY!" superhot garlic sauce in which a blend of the fiery Trinidad 7 Pot will make you sweat!
All of our products are very unique in their own way. For example, our WILDFIRE sauce uses a blend of wild and uncultivated pepper varieties such as the Chiltepin (native to Texas and the Sonoran desert) to produce a unique southwest inspired sauce. Although the flavor of the sauce is very recognizable as a traditional chile sauce, the mouth-burn produced by the wild varieties is like no other sauce out there!
It has been quite an experience being involved in the "hot sauce boom" that we've seen over the last couple of years. After speaking with my customers and talking to other consumers, I've noticed the trend moving from extreme heat to extreme flavor! We at Red Hawk Premium Peppers excel at both!
